The Best Blueberry Muffins !!!

I have been trying out recipes for blueberry muffins for awhile now and while they aren't bad they weren't what I was looking for, I wanted a great recipe one to go in the recipe box for good and finally I have found one !!!

It is from Martha Stewart she had a few different recipes for blueberry muffins but this is my favorite!

Blueberry Muffins

1 stick of unsalted butter (softened)

2 cups of flour

1 1/2 tsp baking powder

1/2 tsp salt

2 cups frozen or fresh blueberries

1 1/4 cups of sugar

2 eggs

2 tsp vanilla

1/2 cup of milk

1/4 tsp nutmeg

preheat oven to 375

mix dry ingrediants in large bowl and in a smaller bowl mix wet ingrediants except blueberries add wet ingrediant mix to dry ingrediants mix well, the batter was a little thicker than I like so I add a little more milk about a tbs at a time.

then fold in blueberries, if you mix them in you will have purple muffins so fold carefully.

bake until the edges of the muffins are slightly golden.

Saturday we went to our Church's annual Easter egg hunt/Cookout and we had so much fun...if you all remember last year it was like 5 degrees out and we ate in our cars in the parking lot so this year was a lot better.

Shawn didn't understand the concept of gathering the eggs in his basket he just found one sat down and ate what was in it and then found another sat down and ate what was in that one, mommy and daddy had to help fill his basket.

Hunter and his cousin Aaron got eggs so fast that when we went to get a picture they were already sitting down counting their candy !!!!

After we ate all the kids played at the playground and Shawn loved the slide soo much.

This last friday was my 25th birthday and I got to spend it in Boone with my husband my kids and 3 of my aunts !!!!

Thursday we headed off to Greensboro around 7pm

and made it to Greensboro alright but got a little lost once we got there....but it was totally worth it once we got to the hotel !

Hello room service, more cheerios please....

The Hotel was amazing, it was peaceful and beautiful and the people working there were super nice....thank you Jack sooo much...it definetly made waking up on my birthday 100 times better!

Friday we drove on to Boone after a memorable breakfast at Biscuitville lol, the view was so pretty with all the mountains and the little christmas trees growing everywhere.

For dinner we ate at this neat japanese steakhouse were they make your food in front of you everyone had a great time and the food was perfect!

Our Hotel in Boone was nice but they had our rooms wrong luckily someone checked out 5 minutes after we got there and we got the rooms we were supposed to have.

Saturday the whole family had a homecooked breakfast at Katy's house and the kids all got to play, I have to say all my cousins are so adorable and it was good to finally see them all and meet little Michael for the first time.

Then we went to the Mass General store and gots lots of candy and some postcards it was drizzling out and pretty cold but it was too packed inside for the kids so we sat outside while everyone finished.

After naps the kids went swimming (I forgot my bathing suit like an idiot so Kicki had her arms full lol)

Sunday we had breakfast at a place sort of like the cracker barrel except the people weren't as bright as the people who work at the cracker barrel, we were able to get a good laugh and they had a really cute gift shop.

After breakfast we had to pack up and head home :(

It was sad to leave everyone but nice to go back home at the same time, the ride home had the most beautiful scenery with the mountains and the kids were so good they slept about 2 hours and then the last 3 everyone was awake and surprisingly Shawn did really good sitting in his carseat for 3 hours with no complaint !!!!!
